Soba is a Japanese dish made from buckwheat noodles and processed with buckwheat flour.
There are two typical ways to eat soba: Kakesoba (hot soba noodles served in a bowl with dipping sauce) and Zarusoba (cold soba noodles served separately with dipping sauce, and eaten while dipping the noodles in the sauce).

Seasoning and toppings

The main ingredients used to make the sauce for soba noodles are soy sauce, dried bonito flakes, kelp, and mirin(sweet sake), and the soup has a characteristic dashi broth aroma.

There are a variety of toppings for soba, such as tempura, duck, grated yam, tanuki (deep-fried tofu), green onions, and wakame seaweed.
